Happiness Personified

“Ice cream is happiness condensed. “ is a quote from Jessi Lane Adams. So the month of July is happiness personified since July is National Ice Cream Month!

Today’s on-the-go families are opting for simple, elegant entertaining. The less time spent in the kitchen, the better. Ice cream is an easy, delicious and, if desired, fancy solution. Old favorites – sundaes, root beer floats, banana splits, milkshakes, pie a-la-mode, and ice cream cones – are among the most popular and simplest choices.

Ice cream is even more delicious when topped off- try hot fudge, chocolate, caramel or even a special liqueur. Add some whipped cream, nuts, fresh summer fruit, sprinkles or cookies for a real treat. A “build-your-own sundae” party is a great way to get everybody in on the fun any day of the week. And don’t forget the cherry! Now here’s one for July!  Strawberry, vanilla and blueberry scoops create a patriotic treat on the 4th of July.  Why not have ice cream for breakfast, one of my family’s favorite.

Waffle Berry ala Mode

  • 1/2 cup strawberry topping
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 4 frozen waffles, toasted
  • 4 scoops vanilla ice cream
  • whipped cream
  • 4 whole strawberries for garnish

Gently toss 1/4 cup strawberry topping with berries; set aside. Place waffle on serving plate. Spoon 1/2 cup berry mixture on waffle. Top with a scoop of ice cream, 1 tablespoon topping and whipped cream. Garnish with additional strawberry. Makes 4 servings.

Just a note! Here are some tips on how to keep ice cream in its most delicious form:

  • Store ice cream in the main part of the freezer. Do not store ice cream in the freezer door, where ice cream can be subject to more fluctuating temperatures since the door is repeatedly open and shut.
  • Keep the ice cream container lid tightly closed when storing in the freezer.
  • Don’t store ice cream alongside uncovered foods; odors may penetrate ice cream and affect its flavor.

Keep a couple of flavors of ice cream in your freezer for a happy treat either for breakfast, dessert or a super snack!
