Need to thaw out after a brisk day?

Nothing beats snuggling up to a warm meal.

What is it about the cold that makes us hungry? Maybe it’s the memories of snow outside and Grandma’s warm soup inside. Whatever the reason for the cool weather munchies, we’ve got you covered with healthy food choices.

A simple but tasty soup is combining condensed tomato soup and adding milk and canned diced tomatoes with chilis for a Mexican flavor or tomatoes with onions for a twist on an old stand-by. Or, check out this great Cream of Tomato Soup recipe from All Recipes.

Consider making hot white chocolate cocoa!  In saucepan, combine 1 quart of milk, 3 ounces of chopped white chocolate, 1 tablespoon of sugar, 2 teaspoons of vanilla extract and ¼ teaspoon of almond extract.  Simmer until all is melted, add a peppermint stick and enjoy a soothing and warm treat.

Warm and gooey brownies really take the chill off a cold January day and makes for a fun family activity.  For the centers of these delicious treats is ganache which sounds exotic but is extremely simple to make.

Bring 1 cup (8 ounces) of heavy cream to a boil and pour over 8 ounces of good quality chopped dark bittersweet chocolate. Let the cream and chocolate mixture set several minutes for the hot cream to melt the chocolate and then whisk well to create an emulsion, which is a requirement for a great ganache. Let the ganache set overnight, or if you’re in a hurry, you can refrigerate the ganache for quicker preparation. Once the ganache is set up, your children can use a small ice cream scoop or melon scoop to portion out truffle-shaped candies. Place candies in a closed container and freeze until brownie batter is ready. Above recipe will make about 24 truffles if you don’t do too much tasting along the way.

Prepare brownie mix and pour into muffin cups half full.  Bake and at the last 5 minutes of baking, place a truffle in middle and push down slightly.  Finish baking and cool slightly.  Remove and have an ice cold glass of milk ready to go with this snack or dessert.
